  • 1 cup Powdered Sugar sifted
  • 1 cup Chocolate Chips semi-sweet or dark, for melting
  • 1 tsp Vanilla Extract pure is best
  • 1 tbsp Cocoa Powder for dusting
For the Decoration
  • 1 cup Candy Eyes
  • 1 cup Colored Sprinkles
  • 1 tbsp Edible Glitter

Method
 

Preparation Steps
  1. Gather all ingredients for the Spooky Eyeball Truffles.
  2. Soften cream cheese at room temperature for about 30 minutes.
  3. Line a baking sheet with parchment paper.
  4. In a large mixing bowl, combine cream cheese and powdered sugar. Mix on medium speed for 3-5 minutes until smooth.
  5. Add vanilla extract and stir until blended.
  6. Melt chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
  7. Allow melted chocolate to cool slightly and then fold into the cream cheese mixture.
  8. Cover and refrigerate for at least 1 hour.
  9. After chilling, form bite-sized balls of the chocolate mixture (about 1 inch in diameter).
  10. Roll truffles in cocoa powder and add candy eyes with melted chocolate.
  11. Sprinkle with colored sprinkles or edible glitter and refrigerate for an additional 30 minutes.
  12. Serve on a spooky platter.
