Ingredients
  

For the Steak
  • 1 lb Flank Steak or hanger or skirt steak
  • 1/4 cup Soy Sauce for marinade
  • 2 tbsp Extra Virgin Olive Oil for marinade and brushing
  • 1 tbsp Brown Sugar or granulated sugar
  • 2 tbsp Apple Cider or Balsamic Vinegar for marinade
  • 1 tbsp Dijon Mustard for marinade
  • 1 clove Garlic minced
  • to taste Kosher Salt for seasoning
  • to taste Black Pepper for seasoning
For the Horseradish Cream
  • 1/2 cup Sour Cream for base of cream
  • 1/4 cup Mayonnaise for richness
  • 2 tbsp Prepared Horseradish for spiciness
  • 1 tbsp Apple Cider Vinegar for tang
For the Crostini
  • 1 loaf Baguette sliced into ½-inch pieces
  • 3 large Yellow Onions for caramelizing
  • to taste Fresh Chives for garnish
  • to taste Flaky Sea Salt for finishing

Method
 

Marinating and Cooking
  1. In a bowl, whisk together soy sauce, olive oil, brown sugar, vinegar, Dijon mustard, and minced garlic. Place steak in a zip-top bag, pour in marinade, seal, and refrigerate for 4 to 24 hours.
  2. Slice yellow onions thinly and heat olive oil in a skillet over low heat, then add onions and caramelize for 30 to 40 minutes until golden.
  3. In a mixing bowl, combine sour cream, mayonnaise, horseradish, apple cider vinegar, and a pinch of salt and pepper; refrigerate for at least 30 minutes.
  4. Preheat broiler, slice baguette, brush with olive oil, and broil for 2 to 3 minutes until golden brown.
  5. Remove marinated steak, pat dry, preheat grill or skillet over high heat; cook steak for about 4 to 5 minutes per side.
  6. Assemble crostini by placing toasted baguette slices on a platter, topping with caramelized onions, sliced steak, horseradish cream, chives, and flaky sea salt.
