Ingredients
  

For the Oatmeal Base
  • 2 cups Rolled Oats Can substitute with quick oats.
  • 1 scoop Plant-Based Protein Powder Can replace with more rolled oats.
  • 1 tbsp Baking Powder
  • 1 tsp Cinnamon Nutmeg or allspice can be used.
  • 1 pinch Salt Sea salt or kosher salt can be used.
  • 2 cups Unsweetened Vanilla Almond Milk Can swap with any milk.
For the Creamy Cheesecake Swirl
  • 1 cup Dannon Light and Fit Vanilla Greek Yogurt Can substitute with any Greek yogurt.
  • 2 tbsp Pure Maple Syrup Honey or agave syrup work too.
  • 2 tbsp Unsalted Butter Use vegan butter for dairy-free.
  • 1 large Egg Can replace with applesauce.
  • 1 large Egg White Chia egg can be used for egg-free.
  • 1 tsp Vanilla Extract Pure vanilla extract is recommended.
For the Cheesecake Layer
  • 1/2 cup Smuckers Low Sugar Strawberry Preserves Other low-sugar preserves can be used.
  • 8 oz Philadelphia Reduced Fat Cream Cheese Use vegan cream cheese as alternative.
  • 1 cup Powdered Sugar Substitute with another sweetener if needed.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8x11" baking dish with coconut oil.
  2. Combine cream cheese, powdered sugar, almond milk, and vanilla extract in a small bowl and whisk until smooth.
  3. In a large bowl, combine rolled oats, protein powder, baking powder, cinnamon, salt, and chopped strawberries.
  4. In another bowl, whisk together the wet ingredients: almond milk, Greek yogurt, maple syrup, melted butter, whole egg, and egg white.
  5. Pour the wet mixture into the dry ingredients and stir gently until combined.
  6. Spread the oatmeal mixture evenly in the prepared baking dish, dollop the cheesecake swirl, and add strawberry preserves on top, swirling gently.
  7. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 20-25 minutes.
  8. Allow to cool in the dish for at least 15 minutes before slicing into 6 pieces.
