- Preheat your oven to 350°F (175°C) and grease an 8x11" baking dish with coconut oil.
- Combine cream cheese, powdered sugar, almond milk, and vanilla extract in a small bowl and whisk until smooth.
- In a large bowl, combine rolled oats, protein powder, baking powder, cinnamon, salt, and chopped strawberries.
- In another bowl, whisk together the wet ingredients: almond milk, Greek yogurt, maple syrup, melted butter, whole egg, and egg white.
- Pour the wet mixture into the dry ingredients and stir gently until combined.
- Spread the oatmeal mixture evenly in the prepared baking dish, dollop the cheesecake swirl, and add strawberry preserves on top, swirling gently.
- Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 20-25 minutes.
- Allow to cool in the dish for at least 15 minutes before slicing into 6 pieces.
