  • 0.5 cup granulated sweetener Choose your favorite sugar substitute.
  • 2 tablespoons freshly squeezed lemon juice Balances sweetness.
  • 1 cup fresh or frozen blueberries Can substitute with other berries.
For the Drink
  • 3-4 cubes ice cubes Chill the drink effectively.
  • 2 cups club soda Avoid tonic water.
  • 2 tablespoons half & half Opt for coconut cream for dairy-free.
  • Optional whipped cream Consider coconut whipped cream for dairy-free.

Method
 

Step-by-Step Instructions
  1. In a medium saucepan, combine 1 cup of filtered water, your chosen granulated sweetener, and 2 tablespoons of freshly squeezed lemon juice. Stir over medium heat until the sweetener dissolves, about 2-3 minutes.
  2. Add 1 cup of fresh or frozen blueberries to the saucepan. Simmer on low-medium heat, stirring occasionally, for about 15 minutes.
  3. Gently mash the softened blueberries with a spoon or masher, then simmer on medium heat for 8-10 minutes.
  4. Remove from heat and let cool, then strain through a fine mesh strainer into a bowl, pressing down to extract the liquid.
  5. Transfer the syrup to the refrigerator and chill for 1-2 hours.
  6. In a tall glass, add 3-4 ice cubes and fill halfway with club soda. Drizzle several tablespoons of the chilled blueberry syrup over the ice.
  7. Slowly pour 2 tablespoons of half & half over the syrup. For dairy-free, use coconut cream.
  8. Top with whipped cream, if desired, give it a stir, and serve immediately.

Notes
