- In a medium saucepan, combine 1 cup of filtered water, your chosen granulated sweetener, and 2 tablespoons of freshly squeezed lemon juice. Stir over medium heat until the sweetener dissolves, about 2-3 minutes.
- Add 1 cup of fresh or frozen blueberries to the saucepan. Simmer on low-medium heat, stirring occasionally, for about 15 minutes.
- Gently mash the softened blueberries with a spoon or masher, then simmer on medium heat for 8-10 minutes.
- Remove from heat and let cool, then strain through a fine mesh strainer into a bowl, pressing down to extract the liquid.
- Transfer the syrup to the refrigerator and chill for 1-2 hours.
- In a tall glass, add 3-4 ice cubes and fill halfway with club soda. Drizzle several tablespoons of the chilled blueberry syrup over the ice.
- Slowly pour 2 tablespoons of half & half over the syrup. For dairy-free, use coconut cream.
- Top with whipped cream, if desired, give it a stir, and serve immediately.
