  • 1 pinch Ginger Optional
  • 1 pinch Cardamom Optional
  • Stevia or Monk Fruit For sweetness, optional

Method
 

Preparation
  1. Rinse the dried apricots under cold water and soak them in a bowl of water for about 2 hours.
  2. Drain the apricots and combine them in a medium saucepan with fresh water, lemon juice, and optional flavor enhancers.
  3. Bring the mixture to a gentle boil, then reduce heat and let it simmer uncovered for 20 to 30 minutes, stirring occasionally.
  4. Remove from heat and blend to your desired texture using an immersion blender.
  5. Allow the compote to cool to room temperature before transferring it to an airtight container.
