Preparation
- Preheat your oven to 350°F (175°C) and prepare your loaf pan by greasing it.
- In a mixing bowl, beat together softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add eggs one at a time to the mixture, mixing on low after each addition. Then, add vanilla extract and mashed sweet potatoes, mixing gently.
- In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually fold the dry ingredients into the wet ingredients until no visible flour remains.
- Pour the batter into the prepared loaf pan, spreading it evenly and tapping to release air bubbles.
- Mix together the sugar and cinnamon for the topping and sprinkle generously over the batter.
- Bake for 55-65 minutes, checking doneness with a toothpick. The bread should be golden brown.
- Allow to cool in the pan for 15 minutes, then transfer to a cooling rack.
