Preparation
  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan by greasing it.
  2. In a mixing bowl, beat together softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add eggs one at a time to the mixture, mixing on low after each addition. Then, add vanilla extract and mashed sweet potatoes, mixing gently.
  4. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually fold the dry ingredients into the wet ingredients until no visible flour remains.
  6. Pour the batter into the prepared loaf pan, spreading it evenly and tapping to release air bubbles.
  7. Mix together the sugar and cinnamon for the topping and sprinkle generously over the batter.
  8. Bake for 55-65 minutes, checking doneness with a toothpick. The bread should be golden brown.
  9. Allow to cool in the pan for 15 minutes, then transfer to a cooling rack.
