Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Peel and cube two medium sweet potatoes, aiming for uniform pieces. Slice a red onion into rounds.
  3. Mix together a splash of lemon juice and a drizzle of olive oil. Pour this mixture over the sweet potato and onion cubes. Toss until well coated.
  4. Grate some cheddar cheese and add minced garlic and crushed cumin seeds. Crack in the eggs and whisk until well combined.
  5. Melt unsalted butter over low heat and stir in sriracha sauce, adjusting to your spice preference.
  6. Add the sriracha butter to the egg mixture, along with chopped cilantro, kosher salt, and pepper. Stir to combine.
  7. Pour the sweet potato and onion mixture into a greased baking dish, followed by the egg mixture.
  8. Bake in the preheated oven for 30-35 minutes, until eggs are set and the top is golden brown.
  9. Let it rest briefly, garnish with cilantro, and serve warm.
