  • 1 teaspoon Turmeric omit if unavailable
  • 1 teaspoon Cumin swap with ground coriander if necessary
  • 1 teaspoon Coriander can use dried coriander
  • 1 teaspoon Cayenne Pepper adjust quantity to taste
  • 1 teaspoon Salt use kosher for better seasoning control

Step-by-Step Instructions
  1. Prepare the Marinade: In a large mixing bowl, combine yogurt, oil, lemon juice, grated ginger, minced garlic, and all the spices. Stir until smooth and fragrant.
  2. Marinate the Chicken: Make slashes in the chicken pieces and coat thoroughly with the marinade. Cover and refrigerate for 12 to 24 hours.
  3. Preheat Oven: Preheat your oven to 200°C (400°F) and line a baking tray with foil and greased wire rack.
  4. Bake Chicken: Arrange the marinated chicken on the rack and bake for 30 minutes. Flip and continue baking for another 10 to 15 minutes.
  5. Rest and Serve: Let the chicken rest for about 5 minutes, garnish with cilantro, and serve with sides.
