  • 1 cup Cherry Tomatoes halved
  • 0.5 cup Red Onion finely chopped
  • 1 bunch Cilantro chopped
  • 1 whole Avocado diced
  • 1 pepper Jalapeño diced
For the Vinaigrette
  • 1 whole Lime Juice and Zest from one lime
  • 0.25 cup Extra Virgin Olive Oil
  • 1 clove Garlic minced
  • 1 tbsp Maple Syrup
  • to taste Salt and Pepper

Step-by-Step Instructions
  1. In a large mixing bowl, combine the drained chickpeas, black beans, corn, cherry tomatoes, red onion, and cilantro. Mix gently.
