  • 1/4 cup Light Soy Sauce Adjust based on personal sodium preferences.
  • 2 tablespoons Dark Soy Sauce Essential for the authentic taste.
  • 1 tablespoon Maggi Sauce Optional but recommended for authenticity.
  • 1 tablespoon Fish Sauce Can be omitted for vegetarian diets.
  • 1 tablespoon Brown Sugar Cane, coconut, or palm sugars can work as substitutes.
  • 3 cups Beef Stock Homemade or store-bought is acceptable.
For the Spice Bag
  • 2 pieces Star Anise
  • 2 pieces Bay Leaves
  • 1 stick Cinnamon Stick
  • 1 piece Cardamom Pod
  • 1 teaspoon Coriander
  • 1/2 teaspoon Black and White Peppercorns
  • 1/2 teaspoon Five Spice Powder Using a muslin bag for easy removal is advised.

Method
 

Step‑by‑Step Instructions
  1. Prepare the spice bag by combining all spices; place them in a muslin bag if available.
  2. In a slow cooker or large stovetop pot, layer beef stew meat, onion wedges, cubed daikon radish, smashed garlic, and sliced ginger.
  3. Pour in the oyster sauce, light and dark soy sauces, Maggi sauce, fish sauce, and brown sugar. Stir to coat ingredients and cover with beef stock.
  4. Submerge the spice bag in the pot and cover tightly with a lid.
  5. Slow cook on low for 8 hours or high for 4 hours, or simmer on stovetop for 3–4 hours until beef is tender.
  6. Stir the stew and adjust seasoning with salt if necessary before serving.
