Step-by-Step Instructions
  1. In a small bowl, whisk together the peanut sauce ingredients until well combined and set aside.
  2. Heat a large non-stick skillet over medium heat, add oil, and cook the ground chicken until no pink remains, about 5-7 minutes.
  3. In the same skillet, add remaining oil and sauté the coleslaw mix and sliced carrots for 3-4 minutes.
  4. Return cooked chicken to skillet, pour in peanut sauce, and stir to combine, seasoning with salt and pepper.
  5. Remove from heat, transfer to serving dish, and top with cilantro, hot chili sauce, and lime juice.
