Prepare the Dough
- Cream together the butter, powdered sugar, vanilla sugar, and salt until light and fluffy, about 3 minutes. Add the eggs one at a time, mixing well. Gradually add flour mixed with baking powder until smooth.
Make Pistachio-Lemon Cookies
- Folding in the ground pistachios and lemon zest, roll out the dough and cut shapes. Let rest for 10 minutes.
Prepare Chocolate Sticks
- Mix in cocoa powder and shape into sticks about 8 cm long. Bake for 10-12 minutes.
Create Peanut Thumbprint Cookies
- Shape dough into balls, coat with egg white and peanuts, press thumb for a well.
Make Jam Filling
- Heat strawberry jam with sugar until bubbling, then cool and place in a piping bag.
Baking
- Bake cookies at 190 °C (375 °F) for 10-12 minutes. Allow to cool slightly.
Decorating
- Dip cookies in melted white chocolate and garnish; Chocolate Sticks can be dipped in melted milk chocolate.
