  • 2 large eggs or substitute with a flax egg
  • 280 g all-purpose flour or gluten-free blend
  • 1 tsp baking powder check for freshness
For Pistachio-Lemon Cookies
  • 50 g ground pistachios can replace with ground almonds
  • 1 whole lemon zest or use orange zest for variation
For Chocolate Sticks
  • 30 g cocoa powder dark cocoa for richer flavor

  • 150 g strawberry jam can swap with raspberry or apricot jam

Method
 

Prepare the Dough
  1. Cream together the butter, powdered sugar, vanilla sugar, and salt until light and fluffy, about 3 minutes. Add the eggs one at a time, mixing well. Gradually add flour mixed with baking powder until smooth.
Make Pistachio-Lemon Cookies
  1. Folding in the ground pistachios and lemon zest, roll out the dough and cut shapes. Let rest for 10 minutes.
Prepare Chocolate Sticks
  1. Mix in cocoa powder and shape into sticks about 8 cm long. Bake for 10-12 minutes.
Create Peanut Thumbprint Cookies
  1. Shape dough into balls, coat with egg white and peanuts, press thumb for a well.
Make Jam Filling
  1. Heat strawberry jam with sugar until bubbling, then cool and place in a piping bag.
Baking
  1. Bake cookies at 190 °C (375 °F) for 10-12 minutes. Allow to cool slightly.
Decorating
  1. Dip cookies in melted white chocolate and garnish; Chocolate Sticks can be dipped in melted milk chocolate.
