  • 1 package Cheese Tortellini or any fresh or frozen pasta
  • 1 medium Cucumber diced
  • 1 cup Cherry Tomatoes halved
  • 1 small Red Onion thinly sliced
  • 1 cup Bell Peppers mixed colors, diced
  • 1/4 cup Chopped Parsley fresh
For the Dressing
  • 1/2 cup Mayonnaise or Greek yogurt
  • 1/4 cup Italian Dressing homemade if preferred
  • 1/4 cup Grated Parmesan Cheese or nutritional yeast for dairy-free
  • to taste Black Pepper

Method
 

Preparation Steps
  1. Wash and dry all fresh vegetables. Dice cucumber, cherry tomatoes, and bell peppers into bite-sized pieces. Thinly slice the red onion and chop the parsley.
  2. In a large pot, bring salted water to a vigorous boil. Add the cheese tortellini and cook according to the package instructions (4-5 minutes), then drain.
  3. While the tortellini cools, whisk together mayonnaise, Italian dressing, grated Parmesan cheese, and black pepper in a mixing bowl.
  4. In a large bowl, combine cooled tortellini with chopped vegetables. Pour dressing over and fold gently until everything is coated.
  5. Cover bowl and refrigerate for at least 2 hours to enhance flavors.
  6. Before serving, toss the salad and garnish with extra Parmesan cheese and chopped parsley if desired.
