For the Lasagna Layers
  • 12 count Corn Tortillas Opt for gluten-free if desired
  • 2 cups Shredded Cheddar Cheese Monterey Jack can be a substitute

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and coat a 9x13-inch baking dish with non-stick cooking spray.
  2. In a large skillet over medium heat, brown the ground beef for 6-8 minutes.
  3. Stir in the water and taco seasoning, cooking for an additional 2-3 minutes.
  4. Add black beans, corn, and 1 cup of salsa to the beef mixture and stir.
  5. Spread a thin layer of salsa on the bottom of the baking dish.
  6. Layer six tortillas over the salsa, add half of the beef mixture, and 1 cup of shredded cheese.
  7. Repeat with six tortillas, remaining beef mixture, and another cup of cheese.
  8. Top with remaining tortillas, salsa, and shredded cheese.
  9. Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15 minutes.
  10. Let it rest for 5-10 minutes before serving.
