  • 1 medium Mango Peeled and diced
  • 2 medium Kiwi Peeled and diced
  • 1 medium Papaya Peeled and diced
  • 1 medium Banana Peeled and sliced
  • 1 cup Pomegranate Seeds For garnish
Dressing
  • 1 tablespoon Orange Zest
  • 1 cup Orange Juice Freshly squeezed
  • 2 tablespoons Lime Juice
  • 2 tablespoons Mint Leaves Minced
  • 1 tablespoon Honey Optional, can substitute agave nectar
  • 1 pinch Salt To taste

Method
 

Preparation
  1. Peel, seed, and dice the pineapple, mango, kiwi, papaya, and banana into uniform bite-sized pieces and set aside.
  2. Gently add all the diced fruits into a large mixing bowl.
  3. Using salad tongs, gently toss the fruit mixture together.
  4. Sprinkle the pomegranate seeds over the combined fruits and mix carefully.
  5. In a small bowl, whisk together the orange zest, orange juice, lime juice, mint leaves, honey, and a pinch of salt.
  6. Pour the citrus dressing over the fruit mixture and stir lightly to coat everything evenly.
  7. Transfer the salad to a serving bowl and top with additional mint leaves.
  8. Enjoy immediately or refrigerate for up to an hour before serving.
