  • 0.25 cup cilantro chopped
  • 1 avocado diced
  • 1 jalapeño diced
For the Chili Lime Vinaigrette
  • 2 tablespoons lime juice
  • 1 tablespoon lime zest
  • 1 clove garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup

Preparation Steps
  1. In a large mixing bowl, combine chickpeas, black beans, corn, cherry tomatoes, red onion, and cilantro. Stir gently to mix.
  2. In a separate bowl, whisk together lime juice, lime zest, olive oil, minced garlic, and maple syrup. Add seasoning to taste.
  3. Pour the vinaigrette over the salad mixture and toss gently until coated.
  4. Let the salad chill in the refrigerator for at least 30 minutes.
  5. Fold in diced avocado just before serving.
  6. Store leftovers in an airtight container, adding avocado when ready to serve.
