Step-by-Step Instructions for Vegan White Chocolate Yule Log
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together almond flour, tapioca flour, baking powder, and salt.
  3. In another bowl, combine aquafaba, applesauce, maple syrup, and olive oil until smooth.
  4. Gradually mix the wet ingredients into the dry mixture until no floury streaks remain.
  5. Spread the cake batter onto the prepared baking sheet evenly.
  6. Bake for 12 to 15 minutes until light and springy.
  7. Let the cake cool for about 5 minutes, then roll it up using the parchment paper.
  8. Blend soaked cashews, melted vegan white chocolate, and maple syrup to make the frosting.
  9. Unroll the cooled cake gently and spread a layer of frosting on it.
  10. Re-roll the cake without the parchment paper and place it seam side down.
  11. Decorate with cranberries or coconut to resemble snow.
  12. Chill in the fridge for at least 30 minutes before slicing and serving.
