Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a large bowl, toss the sweet potatoes with olive oil, salt, and pepper.
  3. Spread sweet potato mixture on the baking sheet and roast for 25-30 minutes, stirring halfway through.
  4. In a skillet, heat 1 tablespoon of olive oil and sauté the minced garlic and chopped sage for 2-3 minutes.
  5. Transfer roasted sweet potatoes to a bowl, and fold in the sautéed garlic and sage, goat cheese, and balsamic vinegar.
  6. Adjust seasoning if necessary and garnish with walnuts and fresh rosemary before serving.
