- Preheat your oven to 400°F (200°C).
- In a cold, heavy-bottomed oven-safe pan, place diced bacon and turn the heat to medium. Cook for about 5 minutes until crisp and golden brown.
- Add the sliced shallot and sauté for 2-3 minutes until translucent and fragrant.
- Toss in the chopped kale with a splash of water and cover with a lid. Steam for about 2-3 minutes until tender.
- Stir in the cooked butternut squash and warm it through for about another 2 minutes.
- In a medium bowl, whisk together your room temperature eggs, along with salt and pepper to taste.
- Pour the egg mixture over the sautéed veggies in the pan and crumble the goat cheese on top.
- Transfer the pan to the preheated oven and bake for 10-15 minutes until puffy and set in the center.
- Once baked, let the frittata sit for 5-10 minutes before slicing.
