For the Seasoning

  • 1 teaspoon Dried Rosemary Use fresh rosemary if available.
  • 1 teaspoon Smoked Paprika Regular paprika or red pepper flakes are substitutes.
  • Salt Adjust to taste.
  • Black Pepper Adjust to taste.
For the Stew
  • 4 cups Vegetable Broth Homemade broth enhances flavor.
  • 1 can White Beans (canned, drained, rinsed) Chickpeas work as an alternative.
  • 2 cups Fresh Spinach Kale can substitute for a heartier green.
  • 1 tablespoon Lemon Juice Lime juice can be an alternative.
  • Fresh Parsley For garnish.

Method
 

Step-by-Step Instructions
  1. Heat the Oil in a large pot over medium heat until shimmering.
  2. Add diced onion and minced garlic, stirring occasionally for about 5 minutes until translucent.
  3. Add sliced mushrooms and cook for approximately 8 minutes until golden brown.
  4. Stir in diced carrots, diced celery, and diced red bell pepper. Sauté for another 5 minutes.
  5. Sprinkle in dried thyme, dried rosemary, and smoked paprika, cooking for 1-2 minutes.
  6. Pour in vegetable broth and add white beans, stirring to combine.
  7. Bring to a boil, then reduce heat to low and let simmer uncovered for 25-30 minutes.
  8. Fold in chopped fresh spinach and cook for another 5 minutes until wilted.
  9. Remove from heat and stir in lemon juice.
  10. Adjust seasoning with salt and black pepper, then garnish with fresh parsley before serving.
