Preparation
- Begin by lightly coating an 8-inch square baking dish with cooking spray to prevent the pistachio brittle from sticking.
- In a small saucepan, pour in the granulated sugar and place it over low heat. Stir continuously for about 12 minutes until melted.
- Once the sugar has melted, remove from heat and quickly stir in the pistachios, coating them with the melted sugar.
- Pour the mixture into the prepared dish and spread it evenly to a thickness of 1/4 to 1/2 inch.
- After pouring, sprinkle a pinch of salt over the top and score the surface into wedges while still warm.
- Allow the brittle to cool completely for about 30 minutes.
- Once hardened, break the brittle into small pieces.
- In individual bowls or jars, layer yogurt, honey, and dried apricots, topping with the pistachio brittle.
