For the Pistachio Brittle
  • 1 cup Granulated Sugar Can substitute with brown sugar
  • 1 cup Pistachios Can substitute with almonds or cashews
  • 1 cooking spray Cooking Spray Parchment paper can be used instead
  • 1/4 teaspoon Salt Sea salt recommended
For the Yogurt Parfait
  • 2 cups Yogurt Greek yogurt preferred
  • 1/4 cup Honey Maple syrup works well as a vegan alternative
  • 1/2 cup Dried Apricots Can substitute with raisins or dried figs

Method
 

Preparation
  1. Begin by lightly coating an 8-inch square baking dish with cooking spray to prevent the pistachio brittle from sticking.
  2. In a small saucepan, pour in the granulated sugar and place it over low heat. Stir continuously for about 12 minutes until melted.
  3. Once the sugar has melted, remove from heat and quickly stir in the pistachios, coating them with the melted sugar.
  4. Pour the mixture into the prepared dish and spread it evenly to a thickness of 1/4 to 1/2 inch.
  5. After pouring, sprinkle a pinch of salt over the top and score the surface into wedges while still warm.
  6. Allow the brittle to cool completely for about 30 minutes.
  7. Once hardened, break the brittle into small pieces.
  8. In individual bowls or jars, layer yogurt, honey, and dried apricots, topping with the pistachio brittle.
