For the Salad
  • 2 cups green beans young and tender
  • 1 can white beans Great Northern, navy, or cannellini
  • 1/2 cup red onion chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh basil chopped
For the Dressing
  • 1 clove garlic minced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 2 tbsp lemon juice freshly squeezed
  • 1/4 cup olive oil

Method
 

Preparation
  1. Wash the young green beans under cold water. Trim the ends.
  2. Bring salted water to a boil and blanch the green beans for 2-3 minutes.
  3. Combine the cooled green beans, rinsed white beans, chopped red onions, half of the feta cheese, and basil in a mixing bowl.
  4. Make the dressing by shaking garlic, salt, pepper, honey, mustard, lemon juice, and olive oil in a jar.
  5. Drizzle the dressing over the salad and toss until well coated.
