Step-by-Step Instructions for Lemon Herb Couscous
- In a small saucepan, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add 1 cup of pearl couscous and toast for about 2-3 minutes.
- Carefully pour in 1 ½ cups of chicken or vegetable broth into the saucepan with the toasted couscous. Stir to combine, then cover and bring to a gentle boil.
- Once boiling, reduce the heat to low and allow to simmer uncovered for about 15 minutes until all liquid is absorbed and couscous is tender.
- Remove from heat and let sit covered for 5 minutes. Fluff the couscous gently and mix in the zest and juice of 1 lemon, salt, pepper, garlic powder, and chopped herbs.
- Taste and adjust seasoning. Serve warm or chilled as a side dish or salad base.

Notes
For maximum brightness, use fresh lemon juice and let couscous rest after fluffing to enhance flavors.
