Step-by-Step Instructions for Lemon Herb Couscous
  1. In a small saucepan, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add 1 cup of pearl couscous and toast for about 2-3 minutes.
  2. Carefully pour in 1 ½ cups of chicken or vegetable broth into the saucepan with the toasted couscous. Stir to combine, then cover and bring to a gentle boil.
  3. Once boiling, reduce the heat to low and allow to simmer uncovered for about 15 minutes until all liquid is absorbed and couscous is tender.
  4. Remove from heat and let sit covered for 5 minutes. Fluff the couscous gently and mix in the zest and juice of 1 lemon, salt, pepper, garlic powder, and chopped herbs.
  5. Taste and adjust seasoning. Serve warm or chilled as a side dish or salad base.
