Step‑by‑Step Instructions
  1. Prepare the Shrimp: Bring a large pot of salted water to a rolling boil. Remove from heat, add shrimp, and poach for 2-3 minutes until opaque and pink.
  2. Cool and Chop the Shrimp: Drain and let shrimp cool for about 10 minutes. Chop into bite-sized pieces.
  3. Marinate the Ingredients: In a mixing bowl, combine shrimp with lemon juice, lime juice, tomatoes, onion, jalapeño, cilantro, and salt. Toss gently.
  4. Chill: Cover and refrigerate for at least 1 hour, preferably longer for best flavor.
  5. Finish and Serve: Fold in diced avocado just before serving. Serve on tostadas or with tortilla chips.
