Preparation Steps
  1. If using raw shrimp, soak them in freshly squeezed lime juice for about 20 minutes until opaque and firm. If starting with cooked shrimp, thaw and chop into bite-sized pieces.
  2. In a large mixing bowl, gently fold together the cured shrimp, diced avocado, cherry tomatoes, green onions, and minced jalapeno if desired. Add lime juice and kosher salt, mixing gently to keep the avocado intact.
  3. Cover the bowl tightly with plastic wrap and refrigerate for at least 20 minutes for flavors to meld.
  4. After chilling, gently stir the ceviche, adjust salt or lime juice to taste, and serve immediately with tortilla chips.
