Ingredients
- 1 kg chicken fillet
- Salt and pepper, to season both sides
- Butter, for cooking
- Olive oil, for cooking
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 bell peppers, chopped
- 7 small tomatoes, halved
- 6 small potatoes, chopped
- 150 ml tomato sauce
- 100 ml water
- Provencal herbs, to taste
- Mozzarella cheese, shredded
Instructions
1. Prepare the Chicken
- Season the chicken fillets on both sides with salt and pepper.
- Heat a mix of butter and olive oil in a large skillet over medium-high heat.
- Cook the chicken fillets until golden brown, about 5-6 minutes per side. Remove and set aside.
2. Sauté the Vegetables
- In the same skillet, add a little more olive oil if necessary.
- Sauté the chopped onion until translucent, about 3 minutes.
- Add the minced garlic and cook for another minute.
- Toss in the bell peppers, halved tomatoes, and chopped potatoes.
- Sauté for 5-7 minutes, stirring occasionally, until the vegetables start to soften.
3. Combine Ingredients
- Preheat your oven to 180°C (350°F).
- Transfer the sautéed vegetables to a baking dish, spreading them out evenly.
- Place the seared chicken fillets on top of the vegetables.
4. Prepare the Sauce
- In a small bowl, mix the tomato sauce with water, a pinch of salt, and Provencal herbs.
- Pour the sauce evenly over the chicken and vegetables.
5. Bake the Dish
